What is Mazemen?

Ramen, without the soup.

Handmade noodles, a rich sauce, a runny egg you mix in yourself. No broth, no spoon — just bold flavour in every bite.

Two bowls of mazemen noodles topped with minced meat, soft eggs, green onions, and seaweed sheets.

So what is it, exactly?

Most ramen is a soup. Mazemen isn't — the broth is gone, and what's left is a small bowl of noodles coated in a rich, punchy sauce. Less liquid, more flavour, more fun. You crack the egg, toss everything together, and every bite after that is different.

Table with Japanese dishes including grilled dumplings, skewers, poke bowl, green rolls, and two drinks.

More than mazemen — this is an izakaya

Kaiso isn't only a mazemen bar. We're a full Japanese izakaya — small plates, robata skewers, sushi, sake and Japanese cocktails, the kind of place you drop into after work and stay a while.

Mazemen is what we're known for. It's not all we do.

Modern reception with pink chairs, wooden counter, large plants, and a person working behind the desk.
